Apples Dipped in Almond Butter

One of my go to snacks is apples with almond butter.  Something about the  combination of juicy apples and crunchy almond butter always satisfies my snack  cravings.  Using that as my inspiration, I thought what can I make that doubles as a snack but can also be a dessert to satisfy my sweet tooth craving?  This is a spin from caramel dipped apples but instead of coating a whole apple with caramel I dip slices of apples in almond butter. 

Ingredients
2 tbsp smooth almond butter
1 tbsp coconut oil, melted
1 tsp maple syrup
pinch of sea salt
Honey Crisp apple cored, and cut into wedges (6-8 slices)
Skewers or toothpicks
Apple Beet Ginger bar

Method
Place a skewer or toothpick halfway into each apple wedge.
Break the apple beet ginger bar into smaller pieces and place into a food processor.  Pulse for a few seconds into crumb sized pieces.  Transfer into a shallow bowl.
Whisk together almond butter, coconut oil, maple syrup and sea salt.
Dip each piece of apple into almond butter mixture and then coat with apple beet ginger bar crumbs. 
Place apple slices on a sheet pan lined with parchment paper and refrigerate until chilled.  This should take approximately 30 minutes.  
Serve chilled.
