Baked Protein Apple Doughnuts

Whenever I crave a doughnut, I'm hesitant to make them since I am not a fan of frying foods at home.  Heating a pot oil makes me nervous.  This recipe eliminates the need to fry the dough since it's a baked doughnut.  The addition of the almond butter glaze makes this treat super nutty and delicious.  
Makes 6

Ingredients
Donut
1/2 cup GF oat flour
1/2 cup almond flour
1/4 cup potato starch
2 tbsp glutenous rice flour
1/4 cup coconut sugar
1/4 tsp salt
1/8 tsp xanthan gum
1 tsp baking powder
1/8 tsp baking soda
1/2 Active Bean apple beet ginger bar, pulverized
3 tbsp sunflower oil
1 tsp vanilla extract
1/4 cup unsweetened apple sauce
2 tbsp almond milk 
Frosting
2 tbsp creamy unsweetened almond butter
3 tbsp coconut butter, melted
1 tbsp maple syrup
pinch of salt
1/2 Active Bean apple beet ginger bar, pulverized


Method
For the doughnuts, combine all the dry ingredients in a large bowl.  Whisk in the sunflower oil, vanilla extract, unsweetened apple sauce and almond milk.  Mix to combine.  Lightly spray a doughnut pan with oil spray.  Place the batter into a pastry bag or a zipped-top bag,  snip off a bottom corner.  Squeeze the batter into prepared pans.  Fill the mixture to the top.  Bake in 350 degrees F pan for 20-25 minutes or until the doughnuts are firm to touch.  Let the doughnuts cool to room temperature.
Frosting: Combine almond butter, coconut butter, maple syrup and salt.  Dip each doughnut into the glaze and place on a wire rack.  Sprinkle the remaining bar on top.
