Easy Vegan and Gluten Free Waffles

Waffles are one of my favorite foods to have anytime of the day.  They can be sweet or savory, simple or all dressed up.   The combinations are endless.  I like to top my waffles with almond butter, jam, strawberries, mint and a sprinkle of Active Bean Banana Coffee bar. This recipe yields a  small batch of waffle mix (makes approximately 2 large ones).  The recipe can easily be doubled and you can freeze the extra cooked waffles.      

Ingredients
1/2 cup brown rice flour
1/2 cup gluten free oat flour *
2 tbsp almond flour
1/3 cup potato starch

1 1/2 tsp coconut sugar 
1 tbsp chia seeds, ground or ground flax seeds
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp Kosher salt
1 cup almond milk or any non dairy milk
2 tsp apple cider vinegar
1 tbsp olive oil
almond butter
jam of choice or maple syrup
berries
mint
Active Bean Banana Coffee bar 

Method
Preheat waffle iron.  In a medium sized bowl, whisk together all the dry ingredients.  Combine the wet ingredients into a small bowl.  Add the wet ingredients into the flour mixture and stir to combine.  
Pour the batter onto a  greased waffle iron and cook until golden brown.  
*to make your own oat flour, place use whole rolled oats or quick cooking oats into a food processor, high speed blend or a grinder.  Blend until a fine powder.
