Peach and Apricot Overnight Oats
Overnight oats as the name implies, is a quick and easy make ahead breakfast or snack. It is simply oats mixed with milk or yoghurt and left overnight in the refrigerator. Next day, you can enjoy the oats naked, or you can top it with any of your favorite fixings such as fresh fruits, nuts, seeds, granola,...the list is endless. How I like to enjoy my oats is blend some super ripe fruits with non dairy yoghurt and then stir in some muesli. The reason why I choose to use muesli is I like the blend of nuts, seeds, and dried fruit for added texture and crunch to my base.
1 medium sized peach, peeled and cut into slices.
1 apricot, cut into slices
1 5.3oz container of non diary yoghurt
1/3 cup museli or oats
slices of peaches
slices of apricots
Active Bean Blueberry Spinach bar
Place the peach, apricot, and non diary yoghurt into a blender. Blend until smooth. Pour into a container and stir in the museli or oats. Leave overnight in a refrigerator. Garnish with blueberries, slices of peaches, apricots and crumbled blueberry spinach bar.
