Summer Strawberry Parfait
Parfaits are one of my favorite things to make. They can be simple or elaborate. I like having them for breakfast, snack or even as a dessert. The combinations are limitless. The chia pudding can be substituted with yoghurt and the nice cream can be omitted or replaced with non diary whipped cream.
1 pint strawberries
1 1/2 tbsp chia seeds
1/2 cup almond milk or any non dairy milk
1 large banana, peeled and cut into slices. Place in freezer overnight.
1 Active Bean blueberry spinach bar
Chia Pudding: Stir together the chia seeds and almond milk. Let it sit for 5 minutes and give the chia pudding another stir. Cover and refrigerate for at least 4 hours. Can be made in advance day before.
Nice Cream: Place frozen banana slices in a food processor bowl along with 3-4 strawberries. Blend until smooth.
To assemble: Layer some chopped strawberries in the bottom of a glass or bowl. Add chia seed pudding. Sprinkle some chopped blueberry spinach bar and top with strawberry nice cream.
