Vegan Chocolate Ice Cream

This four ingredient dairy free chocolate ice cream is rich, creamy and easy to make.  I recommend using a high quality dark chocolate since it is the main flavor.  You will need an ice cream maker for this recipe.
Serves 2 

Ingredients
1 cup coconut milk
1/2 cup oat milk or any other non dairy milk
2 tbsp maple syrup
4oz vegan dark chocolate, chopped

Method
In a small sauce pan, bring coconut milk, oat milk and maple syrup to a boil.  Add the chopped chocolate and whisk to blend.  Let the mixture cool to room temperature and place in the refrigerator to chill.  The mixture can be made a day in advance.  
Pour the chocolate mixture into the ice cream maker and process according to the manufacture's directions.  It should take 15-20 minutes.  If you like your ice cream more like a soft serve, you can serve it right away.  For hard packed ice cream, place in the freezer for approximately 30mins-1hr or until the ice cream  firms up.  Serve with your favorite toppings.
